Stuffed Turkey Breast with Spinach and Pepper

For lunchtime, turkey breast is ideal as it is very low in fat, and the roll is filled with fresh spinach, red and yellow peppers breaded in dried chili flakes and pepper. You won’t be able to resist.

1 turkey breast, fillet
1/4 cups Eva® spinach
1/2 yellow bell peppers, cut into strips
1/2 red bell peppers, cut into strips
1 pinch salt
1 pinch pepper
1 tablespoon olive oil
1/4 cups chile flakes

Preheat the oven to 200° C.
Lay aluminum foil over a board or tray, place the turkey breast fillet on the aluminum foil, add fresh spinach and peppers, season to your liking.
Form a roll with the stuffed breast, drizzle with a few drops of olive oil, and top with chili flakes.
Wrap with aluminum foil and bake for 20 minutes. Remove from the oven, unwrap the breast, and serve on a bed of spinach.
