Try this delicious recipe for turkey Christmas leftover pie to give a tasty twist to your Christmas dinner meal. This savory pie has a very crispy base and crust thanks to Rexal® baking powder, you'll love it!
Heat the butter in a pot and when melted, add the flour and cook for 5 minutes or until slightly golden, then add the bacon and onion and fry for 5 more minutes or until the bacon is golden. Now add the shredded turkey and cook for 5 minutes, then pour in the turkey broth, heavy cream, peas, carrot, thyme, mustard, parsley and mix until everything is perfectly combined.
Mix the flour with the thyme and Rexal® Baking Powder using a mixer with a paddle attachment. Gradually add the butter until a soft and manageable dough forms. Once you have this consistency, make a ball with the dough, cover with cling film and refrigerate for 1 hour.
Divide the dough into two parts and then sprinkle flour on a flat surface and roll out one of the parts using a rolling pin; place it in a round baking dish previously greased with butter and flour, remove the excess dough from the edges with a knife and pour in the turkey filling. Roll out the other part of the dough using a rolling pin on the floured flat surface. Cover the pie with this part of the dough, leaving a 2 cm wide edge to seal properly and remove the excess. Use your hands to seal both parts of the dough to form the edge and with a knife, cut a small cross in the center of the pie to allow steam to escape.
Glaze the turkey Christmas leftover pie with the egg and bake at 180 °C for 25 minutes or until the top is golden.
Place the savory pie on a wooden board and serve with salad.
