Almond Truffles

Almond truffles are a rich variation on the traditional recipe for chocolate truffles.

  • 200 grams semisweet chocolate
  • 30 grams butter
  • 120 milliliters clotted cream
  • 3 tablespoons almonds
  • 2 tablespoons cognac
  • 4 tablespoons cocoa powder

  • In a large skillet toast the peeled almonds until lightly browned.
  • In a hot pan, whip the cream and butter until they are about to boil.
  • Remove from the heat, add the chocolate, and mix with a wooden spoon until the chocolate is 100% melted.
  • Add the almonds and cognac and allow the mixture to cool to room temperature.
  • With your hands, form balls with the mixture (approximately 40) and pass them through the cocoa powder.
