Almond truffles are a delicious variation of the traditional chocolate truffle recipe.

200 grams semisweet chocolate
30 grams butter
120 milliliters clotted cream
3 tablespoons almonds
2 tablespoons cognac
4 tablespoons cocoa powder

In a large skillet, toast the peeled almonds until they are lightly golden.
In a saucepan, heat the cream and butter until just about to boil.
Remove from heat, add the chocolate, and with a wooden spoon, stir until the chocolate is 100% melted.
Add the almonds and the cognac and let the mixture cool to room temperature.
With your hands, form small balls with the mixture (approximately 40) and roll them in cocoa powder.
