Preparation
In a large skillet toast the peeled almonds until lightly browned.
In a hot pan, whip the cream and butter until they are about to boil.
Remove from the heat, add the chocolate, and mix with a wooden spoon until the chocolate is 100% melted.
Add the almonds and cognac and allow the mixture to cool to room temperature.
With your hands, form balls with the mixture (approximately 40) and pass them through the cocoa powder.
