Banana Walnut Cake

  • 2 bananas
  • 1 1/2 cups butter
  • 1 1/2 cups sugar
  • 5 eggs
  • 1 teaspoon vanilla essence
  • 3 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup pecans
  • icing sugar

  • In a mortar, mash the bananas and set aside.
  • In a mixer, cream the butter with the sugar and add the eggs one by one, then the vanilla extract, flour, baking powder, salt, and walnuts. Add the mashed bananas and mix for 10 minutes.
  • Pour the mixture into a loaf pan and bake for 1 hour at 180°C.
  • Unmold, dust with powdered sugar, and slice the cake.
