Cheesecake with coffee flan

  • 2 cups vanilla cookies, crushed, for the cheesecake base
  • 3/4 cups butter, melted, for the cheesecake base
  • 1 cup evaporated milk, for the cheesecake
  • 1/2 cups condensed milk, for the cheesecake
  • 2 cups cream cheese, for the cheesecake
  • 1 tablespoon D'Gari vanilla essence
  • 2 envelopes D'Gari powder gelatin, 14 g, previously hydrated and melted
  • 2 cups milk, for the coffee flan
  • 2 tablespoons instant coffee, for the coffee flan
  • 1 Flan D'Gari® vanilla flavor, 115 g, for the coffee flan
  • whipped cream, for decoration
  • milk chocolate, grated, for decoration

  • For the base: in a bowl, mix the vanilla cookies and butter with a spatula until you achieve a firm consistency that doesn't crumble.
  • Grease a cheesecake pan with butter. Add the cookie and butter mixture and press down to a thickness of 1 cm. Let cool and set aside.
  • For the cheesecake: blend the evaporated milk, condensed milk, cream cheese, D’Gari® vanilla extract, and previously hydrated D’Gari® powdered gelatin in a thin stream for 5 minutes or until you achieve a homogeneous mixture. Pour the mixture over the cookie base and let cool for 30 minutes or until set.
  • For the coffee flan: heat the milk, instant coffee, and D’Gari® vanilla-flavored flan in a pot over medium heat. Stir constantly, cook over low heat until it starts to boil, and cook for 3 minutes. Remove from heat and set aside.
  • Once the flan mixture is warm, pour it over the cheesecake and refrigerate for 1 hour or until set.
  • Unmold the cheesecake with flan, decorate with whipped cream, and sprinkle with chocolate.
  • Serve a slice and enjoy with a coffee.
