1 tablespoon vanilla essence

1 egg white
3/4 teaspoons cinnamon

3/4 teaspoons baking powder
1/4 teaspoons baking soda
1/4 teaspoons salt
1/2 cups rompope, (for the filling)
1 tablespoon cornstarch, (for the filling)
7 grams unflavored gelatin powder, (for the filling)
450 grams cream cheese, (for the filling)
3/4 cups sugar, (for the filling)
1/2 teaspoons nutmeg, (for the filling)
115 grams chantilly cream, (for the filling)
chocolate truffles, coconut shavings (for decoration)
peppermint candy canes, (for decoration)
chocolate chips, red and green (for decoration)

Preheat the oven to 180°C.
Melt the butter in the microwave and pour it into a mixing bowl.
Add the brown sugar, vanilla, egg, and egg white. Beat until everything is well incorporated.
Mix the flour, cinnamon, nutmeg, ginger, pepper, baking powder, salt, and baking soda.
Gradually incorporate the dry ingredients into the mixer.
Grease a round mold and spread the mixture evenly across the bottom. Bake at 180°C for 30 minutes.
Remove from the oven and let cool completely.
For the filling: Place the rompope and cornstarch in a pot.
Add the gelatin to the pot and mix until the gelatin is well incorporated. Remove from heat and let cool completely.
Beat the cream cheese together with the sugar until creamy.
Add the rompope mixture and nutmeg.
Fold in the whipped cream gently.
Spread the filling over the baked crust and refrigerate for 4 hours.
Decorate with more whipped cream and arrange the truffles around, along with sprinkles and Christmas candies.
