  • 2 envelopes unflavored gelatin powder
  • 1/2 cups water, cold
  • 2 sticks cream cheese, softened 190 g each
  • 1/2 cups sugar
  • 3 tablespoons cocoa
  • 1 cup whipping cream
  • 2 packages OREO cookies, (340 g)
  • 1/2 sticks butter, melted (90 g)
  • 1/2 cups chocolate, melted (for decoration)
  • 1 package raspberries, (200 g for decoration)
  • 10 leaves spearmint

  • Hydrate the gelatin with water until it blooms in a glass bowl. Microwave for 10 seconds or until it becomes liquid.
  • Crush the cookies in the food processor and add the melted butter, mixing well. Pour into a 25 cm mold and compact to form the cheesecake base.
  • Blend the cream cheese, sugar, cocoa, and heavy cream until thickened and fully combined. Finally, incorporate the melted gelatin and mix well.
  • Pour the blender mixture into the mold, remove the air, and refrigerate for 45 minutes.
  • Remove the cheesecake from the refrigerator. Unmold and drizzle with the melted chocolate, decorate with raspberries, and finish by placing the mint leaves.
