  • 2 cups cinnamon cookies, crushed
  • 1 cup butter, melted
  • 1 teaspoon vanilla essence
  • 1 1/2 cups cream cheese, in medium cubes
  • 1/2 cups icing sugar
  • 2 cups whipping cream
  • 1 tablespoon lime juice
  • 1 1/2 cups McCormick® Strawberry Jam
  • 1 envelope unflavored gelatin powder, hydrated
  • cinnamon cookies, crushed, for decorating
  • McCormick® Strawberry Jam, for decorating
  • strawberries, quartered, for decorating

  • In a bowl, mix the cookies, butter, and vanilla until well combined. Place the mixture in a round mold with acetate. Refrigerate for 1 hour.
  • Beat the cream cheese with the sugar, and when there are no lumps, add the whipping cream and mix until you achieve a homogeneous consistency. Then, add the lemon juice, McCormick® strawberry jam, and the gelatin and mix very well.Pour the mixture into the dish with the cookies and refrigerate for 2 hours.
  • Place the cheesecake on a serving plate, add crushed cookies around, and decorate with a bit of McCormick® strawberry jam and strawberries.
