In a bowl, mix the cookies, butter, and vanilla until well combined. Place the mixture in a round mold with acetate. Refrigerate for 1 hour. Beat the cream cheese with the sugar, and when there are no lumps, add the whipping cream and mix until you achieve a homogeneous consistency. Then, add the lemon juice, McCormick® strawberry jam, and the gelatin and mix very well.

Pour the mixture into the dish with the cookies and refrigerate for 2 hours. Place the cheesecake on a serving plate, add crushed cookies around, and decorate with a bit of McCormick® strawberry jam and strawberries.
