Sour Lemon Pudding

Compared to a traditional recipe, this sour lemon pudding recipe has 37% fewer kilojoules, 41% fewer carbohydrates, and 83% less sugar.

  • 1/2 cups Splenda, Granulated Sweetener
  • 2 limes, large with grated zest
  • 250 grams sour cream, light
  • 2 eggs
  • 1/2 teaspoons yeast, dissolved in a teaspoon of water
  • 1 tablespoon orange liqueur, , optional

  • Mix the SPLENDA® Granulated No Calorie Sweetener with the lemon zest and sour cream. Beat the eggs one by one and then slowly incorporate the flour and baking powder.
  • Lightly grease a 5-6 cup bowl and transfer the mixture to the bowl. Place a sheet of parchment paper over the bowl and then a sheet of aluminum foil.
  • Secure both layers tightly with string, then fold all the edges firmly to seal the bowl. Place a plate at the bottom of a large pot and fill with enough water to reach halfway up the sides of the bowl. Cover the pot and bring the water to a boil. Reduce the heat and simmer until boiling point for 1 1/2 hours or until the pudding is firm.
  • Remove the pudding from the bowl and immediately pour the liquor.
  • Serve warm with a custard made with SPLENDA® Granulated Sweetener.
