Cake From The Tower

The Potosino flavor of a good dessert. This delicious fluffy cake, moist with the mixture of three milks, with a rich chocolate flavor, decorated with fresh fruit of your choice will be everyone's favorite dessert at home.

  • 4 tablespoons rompope, or brandy
  • 1/4 cups cocoa
  • 2 cups flour
  • 1 tablespoon baking powder
  • 8 eggs
  • 1 cup sugar
  • 2 tablespoons butter
  • 2 tablespoons vanilla essence
  • 1 1/2 cups whipping cream, for the frosting
  • 1/4 cups cocoa, for the frosting
  • 1 cup evaporated milk
  • 1 cup condensed milk
  • 1 cup whole milk

  • Preheat the oven to 180°C. Grease a 24-centimeter diameter baking pan, lining the bottom and sides with parchment paper.
  • Blend the condensed milk, evaporated milk, regular milk, brandy or rompope, and cocoa; set aside.
  • In a bowl, mix the flour with the baking powder and sift them. Set aside.
  • Beat the eggs and sugar for about 10 minutes, or until they turn pale. Transfer the mixture to a large bowl and gradually add 1/3 of the flour and baking powder mixture; fold in gently and repeat the same procedure until all the flour mixture is incorporated.
  • Add the butter and vanilla extract; fold in using gentle movements.
  • Pour the mixture into the pan and bake for 35 minutes or until the surface is golden.
  • Remove the bread from the oven, let it cool for 5 minutes, unmold it, flip it over, and place it back into the pan.
  • Soak the still warm bread with the milk mixture and let it cool inside the pan.
  • Whip the cream and gently fold in the cocoa.
  • Unmold the cake and cover the entire surface with cream. Decorate with fresh fruit.
