The splendid royal charlotte but now with chocolate. A fluffy chocolate cake with a vanilla and mascarpone cheese filling, all accompanied by creamy and smooth chocolate mousse. The best dessert to gift.
12 eggs, separated into egg whites and yolks, for the sponge cake
1 cup Great Value® granulated sugar, divided in two for the sponge cake
2 teaspoons vanilla essence
1 1/2 cups Great Value® wheat flour
1 cup cocoa powder
2 teaspoons baking powder
1/2 cups butter, melted
2 packages mascarpone cheese, 226g each
3/4 cups Great Value® icing sugar
1 teaspoon vanilla essence
1 1/2 cups whipping cream
450 grams bittersweet chocolate, in pieces
2 cups whipping cream, semi-whipped
1/2 cups strawberries, in halves for decoration

Preheat the oven to 180°C.
For the sponge cake, beat the egg whites with half of the sugar until stiff peaks form. On the other hand, beat the egg yolks with the remaining sugar until doubled in volume and incorporate the vanilla.
Mix the egg yolks with the egg whites gently. Add the sifted powders and the butter.
Pour the previous mixture into two baking sheets lined with parchment paper or silicone mats, spreading it out evenly. Bake for 10 minutes.
For the cheese filling, mix the mascarpone cheese with the powdered sugar and vanilla.
Unroll the sponge cake and pour in the cheese filling, spreading it out and carefully rolling it back up. Refrigerate for 15 minutes.
For the chocolate mousse, heat the heavy cream and pour it over the chocolate, mixing until fully integrated. Gently fold in the semi-whipped cream and mix very well. Set aside.
For assembly, line a bowl with plastic wrap and set aside. Cut the chocolate roll into 2cm thick slices and cover the bowl, ensuring not to leave large gaps.
Fill with the chocolate mousse, smoothing it out with a spatula and cover with the sponge cake disc. Refrigerate for two hours or until the mousse sets.
Unmold the charlotte and decorate with halved strawberries.
