Chocolate Swiss Roll with Walnut

  • 10 eggs, for the cake
  • 1/2 cups vegetable oil, for the cake
  • 1 box Tres Estrellas® dark chocolate cake mix, for the cake
  • icing sugar, for the cake
  • 2 cups bittersweet chocolate, for the mousse
  • 1 cup whipping cream, hot, for the mousse
  • 1 cup walnuts, toasted and finely chopped
  • 1 cup chocolate, melted, for the ganache
  • 1/2 cups whipping cream, hot, for the ganache
  • strawberries, for decoration
  • toasted pecans, for decoration
  • peppermint, for decoration

  • For the cake, blend the egg, oil, Dark Chocolate Flavor Cake Flour Tres Estrellas®, pour into a 30 x 40 cm tray lined with parchment paper, and using a spatula, spread completely over the tray. Bake for 12 minutes at 170°C.
  • Sprinkle powdered sugar over a cloth, flip the cake while still hot, and remove the parchment paper, rolling it with the cloth. Let cool and set aside.
  • For the mousse; mix the heavy cream with the dark chocolate until completely dissolved. Cover with plastic wrap and freeze for 30 minutes. Set aside.
  • In a mixer with a whisk attachment, beat the mousse for 5 minutes or until you have a firm chocolate cream.
  • Unroll the cake, fill with the chocolate mousse, add the toasted walnuts, and roll again, placing it on a rack with a tray and set aside.
  • For the ganache, mix the heavy cream with the chocolate until completely dissolved. Set aside and let cool slightly.
  • Cover the roll with the ganache, using a spatula to spread the chocolate, and decorate with toasted walnuts, strawberries, and mint.
  • Serve accompanied by a cup of coffee.
