Avocado Brownies

  • 300 grams bittersweet chocolate, into pieces
  • 2 tablespoons coconut oil
  • 2 avocados, ripe, in pieces
  • 1/4 cups non-caloric sweetener, (baking) sucralose
  • 1 teaspoon vanilla essence
  • 3 eggs
  • 1/2 cups cocoa powder
  • 1/2 cups flour
  • 1/4 cups walnuts, chopped

  • Preheat the oven to 200°C.
  • Melt the chocolate in a double boiler along with the coconut oil. Mix until combined, remove from the double boiler, and let it cool slightly.
  • In a food processor, process the avocado until it forms a smooth puree.
  • In a bowl, whisk the melted chocolate with the avocado puree, zero-calorie sweetener, vanilla, and eggs. Gradually add the cocoa and flour. Mix in the chopped nuts lightly.
  • Pour the mixture into a previously greased and floured brownie pan. Bake for about 15 minutes or until cooked. Cool and cut.
