Vegan Brownies

This version of brownies is much healthier; we use natural sugars from fruit, gluten-free rice flour, unsweetened cocoa... and no eggs. They are ultra-easy to make and delicious.

  • 300 grams pitted dates, mashed and turned into puree
  • 100 grams vegetable margarine
  • 120 grams apple purée, as a substitute or amasake
  • 80 grams rice flour
  • 2 teaspoons dry yeast
  • 3 tablespoons unsweetened cocoa powder
  • 50 grams pecans
  • 50 grams pistachios, peeled and unsalted

  • In a bowl, combine the wet ingredients, which are the date puree, apple puree, and vegan margarine. Mix well.
  • In another bowl, mix the dry ingredients: rice flour, baking powder, and unsweetened cocoa.
  • Combine both mixtures by stirring with a wooden spoon.
  • Add the dried fruits to the dough.
  • Grease a 24 x 24 cm mold with margarine and dust it with flour; shake off any excess.
  • Pour the dough into the mold and smooth the surface with a spatula.
  • Bake in the oven at 180ºC for about 20-25 minutes.
  • Check the center of the cake, which should be white, and the edges should be done. Let it cool properly before cutting, as we risk breaking the cake.
