Christmas Surprise

These cupcakes will become your favorite dessert; the softness of the cake and the creamy filling topped with a delicious berry compote will delight even the most discerning palate.

  • 1 1/2 cups flour
  • 1/2 teaspoons baking powder
  • 1/2 teaspoons salt
  • 90 grams butter
  • 2 eggs
  • 2/3 cups sugar
  • 2 teaspoons vanilla essence
  • 1 cup Oikos® plain Greek yogurt
  • 1 cup Danette® Vanilla Custard, for the filling
  • 190 grams cream cheese
  • 1/2 cups raspberries, for the compote
  • 1/2 cups cherries, for the compote
  • 4 tablespoons water

  • Preheat the oven to 180°C.
  • Mix the dry ingredients: flour, baking powder, and salt. Set aside.
  • Beat the butter until soft, add the eggs, sugar, and vanilla, then add the Oikos® Natural Yogurt and mix in all the dry ingredients until incorporated.
  • Pour the mixture into cupcake liners and bake for 15 minutes. Let cool and set aside.
  • For the filling, beat the Danette® Vanilla Flavored Custard and add the cream cheese. Refrigerate and set aside.
  • For the compote, heat the raspberries and cherries over low heat, add water and cook until pureed, let cool and set aside.
  • Hollow out the cupcakes and pour in the filling, then cover with the fruit compote.
