400 grams passion fruit pulp
250 milliliters canned peaches, using only the syrup
4 tablespoons sugar
3 eggs
1/2 tablespoons wheat flour
3 tablespoons corn masa flour, refined
25 grams icing sugar
1 cup water

Separate the egg whites from the yolks.
In a saucepan, heat the syrup with a splash of water.
In a bowl, mix the two types of flour with the sugar. Gradually pour in the rest of the water while stirring.
Also incorporate the yolks. Once everything is well mixed, add it to the saucepan when the syrup is boiling.
Heat until it thickens and let it cool.
Cut the passion fruits and scoop out their pulp with a spoon.
Blend with a mixer and strain.
Incorporate the passion fruit juice into the previous mixture while whisking with a whisk.
Whip the egg whites with powdered sugar until stiff peaks form and fold it into the previous mixture carefully to keep it fluffy.
