Passion fruit mousse

  • 400 grams passion fruit pulp
  • 250 milliliters canned peaches, using only the syrup
  • 4 tablespoons sugar
  • 3 eggs
  • 1/2 tablespoons wheat flour
  • 3 tablespoons corn masa flour, refined
  • 25 grams icing sugar
  • 1 cup water

  • Separate the egg whites from the yolks.
  • In a saucepan, heat the syrup with a splash of water.
  • In a bowl, mix the two types of flour with the sugar. Gradually pour in the rest of the water while stirring.
  • Also incorporate the yolks. Once everything is well mixed, add it to the saucepan when the syrup is boiling.
  • Heat until it thickens and let it cool.
  • Cut the passion fruits and scoop out their pulp with a spoon.
  • Blend with a mixer and strain.
  • Incorporate the passion fruit juice into the previous mixture while whisking with a whisk.
  • Whip the egg whites with powdered sugar until stiff peaks form and fold it into the previous mixture carefully to keep it fluffy.
