Preparation
Separate the whites from the egg yolks.
In a saucepan heat the syrup with a splash of water.
In a bowl, mix the two types of flour with the sugar. Gradually add the rest of the water, stirring constantly.
It also incorporates the yolks. Once all mixed well, add it to the saucepan when the syrup boils
Heat until it thickens and let it cool.
Cut the passion fruit and empty its pulp with a spoon.
Beat with the blender and strain.
Add the passion fruit juice to the previous mixture, while you are beating with a stick.
Put the egg whites with the impalpable sugar on the snow and pour everything over the previous preparation, mixing carefully so that it is spongy.
