Corn Muffins

  • 1 1/2 cups flour
  • 3/4 cups butter
  • 1/2 cups sugar
  • 2 eggs
  • 1 tablespoon vanilla essence
  • 3 eggs
  • 1 1/2 cups corn kernels
  • 1 cup condensed milk
  • 4 tablespoons flour
  • 1 tablespoon vanilla essence

  • In a mixer, mix the flour with the butter until a sandy dough forms.
  • Add the sugar, eggs, and vanilla. Mix for 5 minutes until a dough forms. Cover with plastic wrap and refrigerate for 40 minutes.
  • Blend the 3 eggs, cream cheese, condensed milk, corn, flour, and vanilla. Set aside.
  • Roll out the dough and form circles approximately 7 cm in diameter, the size of your muffin mold.
  • Grease the mold with butter, and place the circles as shown in the video, prick the dough to let the steam escape. Fill with the blended mixture, ¾ of the mold. Bake for 30 minutes at 180°C.
  • Serve on a wooden board and accompany with coffee.
