Cream Cheese Mousse with Berries

It's like a cake, but it looks like gelatin; it's a delicious and creamy recipe. I loved this dessert; the preparation takes at least half an hour, but the waiting time for it to set is very long, but it’s worth the wait.

  • 570 grams low-fat cream cheese, brand Philadelphia
  • 18 envelopes artificial sweetener
  • 25 grams unflavored gelatin powder, soaked in 1/4 cup of cold water
  • 3 cups low fat plain yogurt without sugar
  • 3 vanilla essence
  • 4 slices vanilla flavor box cake
  • 1 cup strawberries, washed, disinfected, and cut into quarters
  • 1 cup blackberries
  • 1 cup raspberries

  • MIX the berries and reserve half a cup for decoration
  • COVER the bottom of a 24 cm mold with parchment paper and place the pound cake at the base
  • BEAT the cheese with the cream, yogurt, and vanilla
  • ADD the sugar substitute to incorporate. Scrape the sides of the mixer to avoid lumps
  • DISSOLVE the gelatin in a double boiler or in the microwave and add it while hot
  • ADD one and a half cups of the berries and gently mix using a spatula
  • POUR into the mold over the pound cake and refrigerate until set, approximately 3 hours
  • UNMOLD, and decorate with fresh fruits.
