This way of presenting cupcakes is one of the most innovative there is. Decorating cupcakes with fondant is much easier than doing it on large cakes, allowing for endless shapes and colors to achieve incredible details.
In a medium bowl, mix the flour, salt, and baking powder.
In a large bowl, beat butter and gradually add sugar. Add the eggs one by one and the vanilla. On low speed, gradually add the flour mixture and continue beating until the mixture is homogeneous.
Place medium-sized cupcake liners in the cupcake trays and fill them with the mixture to 2/3 of their capacity.
Bake for 20 minutes or until a toothpick comes out clean.
Let cool.
If the cupcakes are too fluffy, slice off the tops so they are level with the cupcake liner.
Spread a little jam on top of the cupcake so that the fondant does not peel off.
To make the bunnies, knead a ball of fondant and roll it out with a rolling pin on wax paper until it has a circumference larger than the surface of the cupcake. Peel it off the wax paper, place it on the cupcake, and press with your fingers so that the paper of the cupcake liner cuts off the excess fondant.
Make the ears and nose with your hands using white fondant.
Dye a bit of fondant with gel color using a toothpick to achieve the pink color for the details, and mold it by hand.
Place the ears, nose, and bunny details on the fondant surface of the cupcake. To ensure these details stick, moisten them slightly with a brush.
Paint the eyes and whiskers with a special food marker.
