2 cups butter, at room temperature
1 3/4 cups icing sugar
1 egg
1 teaspoon vanilla essence
3 1/2 cups flour
1/4 teaspoons salt
1 cup icing sugar, for the icing
2 tablespoons orange juice, for the icing
1/4 cups apricot jam
1/4 cups blackberry jam

Preheat the oven to 180°C.
Beat the butter with the powdered sugar, add the egg and vanilla extract, then add flour, salt, and beat for 3 minutes on low speed.
Form small balls and place them on a baking sheet, using your finger, press into the center, bake for 15 minutes. Let cool and set aside.
For the icing, mix the powdered sugar with orange juice. Set aside.
On a cooling rack, decorate the cookies with icing and add the jam.
Enjoy with a glass of milk.
