Piloncillo Cookies

This recipe is delicious and traditionally Mexican, piloncillo cookies with anise and cinnamon. They are a treat you can't miss. Perfect for gifting, their exquisite flavor will be addictive for everyone.

  • 120 milliliters water
  • 300 grams piloncillo, grated
  • 5 grams anise seeds
  • 1 stick cinnamon
  • 700 grams flour, sifted
  • 180 grams icing sugar, sifted
  • 5 grams baking powder
  • 250 grams butter, cut into cubes, fried
  • 3 eggs, 1 egg set aside for brushing

  • In a saucepan, boil the water, piloncillo, cinnamon, and anise until it forms a thick syrup. Let it cool and remove the cinnamon stick.
  • In a bowl, combine the flour, baking powder, and powdered sugar. Add the butter and with your hands, begin to incorporate it until it forms a sandy dough.
  • Add the piloncillo syrup and mix well. Place the dough in a plastic bag and refrigerate for 30 minutes.
  • Preheat the oven to 170°C.
  • Lightly flour the work surface and roll out the dough, cut the cookies, and place them on a baking sheet. Brush the cookies with a beaten egg.
  • Bake the cookies for about 10 minutes or until they are lightly golden.
