Ingredients

30 portions
  • 120 milliliters Water
  • 300 grams piloncillo, grated
  • 5 grams anise seed
  • 1 raja cinnamon
  • 700 grams flour, sifted
  • 180 grams powdered sugar, sifted
  • 5 grams baking soda
  • 250 grams butter, cut into cubes, cold
  • 3 eggs, 1 egg reserve it for varnishing

Preparation

In a saucepan boil water, brown sugar, cinnamon and anise to form a thick syrup. Let it cool and remove the cinnamon slit.
Place the flour, baking powder and sugar in a bowl. Add the butter and with your hands start to incorporate it to form a sandy paste.
Add the piloncillo syrup and mix perfectly. Place the dough in a plastic bag and refrigerate for 30 minutes.
Preheat the oven to 170 ° C.
Lightly flour the work surface and stretch the dough, cut the cookies and place them on a baking sheet. Glaze the cookies with a beaten egg.
Bake the cookies for about 10 minutes or until lightly browned.

PRESENTATION

Store them in a cellophane bag.
