This chocolate pudding with quinoa and chia is spectacular and a sophisticated dessert to impress your guests, featuring a creamy chocolate English sauce and accompanied by banana slices and caramel ice cream.
In a medium bowl, combine the chia with natural yogurt and refrigerate for 30 minutes until the chia hydrates. Set aside.
For the chocolate sauce, in a small pot over medium heat, warm the cream with the milk. Add the sugar, cocoa, and salt. Cook until it comes to a boil.
Place the egg yolks in a bowl and add a bit of the hot milk, stirring immediately, then add the tempered yolks to the pot and cook over low heat, stirring constantly for 5 minutes or until it thickens. Remove from heat and incorporate the chocolate, cool immediately.
In 4 small glasses, layer the chia soaked in yogurt, then the granola with Kellogg’s® quinoa, a bit of chocolate sauce, and finish with a scoop of ice cream, bananas, and drizzle with chocolate syrup.
