Tapioca Pudding with Caramel

  • 1/2 cups tapioca

  • 1/4 cups caramel
  • 1/4 cups sugar 1/4 cups sugar

  • Soak the tapioca in water for 8 hours. Drain the water and set aside. Pour Whole Milk Santa Clara®, the caramel, vanilla, and salt into a bowl, place the bowl in a water bath, and stir until everything is combined.
  • Add the tapioca and cook until bubbles form, reduce the temperature to low heat, cover, and cook for 1 hour.
  • In a separate bowl, beat the egg yolks with the sugar, add a bit of the tapioca mixture to the yolks and beat.
  • Return everything to the tapioca mixture, cover, and cook on low heat for 15 minutes.
  • Let cool for 5 minutes and serve.
