Pamper your family and prepare this rich tapioca pudding with caramel. It has a delicious sweet taste, a smooth and thick consistency. It is an ideal dessert after lunch, it will be one of your favorite desserts.

Ingredients

4 servings
  • 2 1/2 cups of Whole Milk Santa Clara®
  • 1/2 Cup of tapioca
  • 1/8 of teaspoonful of Salt
  • 1/4 of Cup of candy
  • 1/4 of Cup of sugar
  • 2 egg yolks

Preparation

Soak the tapioca in water for 8 hours. Drain the water and reserve. Pour Santa Clara® whole milk, caramel, vanilla and salt into a bowl, place the bowl in a bain-marie and stir until everything is integrated.
Add the tapioca and cook until bubbles come out, reduce the temperature to low heat, cover and cook for 1 hour.
In a separate bowl, beat the yolks along with the sugar, add a little of the tapioca mixture to the yolks and whisk.
Return everything to the tapioca mixture, cover and cook over low heat for 15 minutes.
Let cool for 5 minutes and serve.

PRESENTATION

Serve in a glass and decorate with a mint leaf.

TIPS

It can be served cold or hot.
