Preparation
Soak the tapioca in water for 8 hours. Drain the water and reserve. Pour Santa Clara® whole milk, caramel, vanilla and salt into a bowl, place the bowl in a bain-marie and stir until everything is integrated.
Add the tapioca and cook until bubbles come out, reduce the temperature to low heat, cover and cook for 1 hour.
In a separate bowl, beat the yolks along with the sugar, add a little of the tapioca mixture to the yolks and whisk.
Return everything to the tapioca mixture, cover and cook over low heat for 15 minutes.
Let cool for 5 minutes and serve.
