Banana and Walnut Flan

  • 1 tablespoon butter, for the bananas
  • 2 bananas
  • 1/2 cups raw sugar, for the bananas
  • cinnamon powder, for the bananas
  • 1 1/4 cups cream cheese
  • 1 cup dulce de leche
  • 1 1/2 cups evaporated milk
  • 5 eggs
  • cajeta
  • obleas, for decorating
  • walnuts, toast and chopped
  • 2 star anise pods

  • Heat evaporated milk with cinnamon and star anise over low heat until it boils. Cool and set aside.
  • In a skillet over medium heat, melt the butter, add the banana, brown sugar, and sprinkle cinnamon; cook for 5 minutes and remove from heat. Set aside.
  • For the cheese mixture, blend cream cheese, dulce de leche, the warmed evaporated milk, and eggs. Set aside.
  • To assemble the flan, pour cajeta into the bottom of flan molds or individual cups, add the bananas and the cheese mixture. In a water bath with hot water, cook over medium heat on the stove for approximately 30 minutes. Cool.
  • Unmold the flans and decorate with chopped walnuts and wafers.
