Heat evaporated milk with cinnamon and star anise over low heat until it boils. Cool and set aside.
In a skillet over medium heat, melt the butter, add the banana, brown sugar, and sprinkle cinnamon; cook for 5 minutes and remove from heat. Set aside.
For the cheese mixture, blend cream cheese, dulce de leche, the warmed evaporated milk, and eggs. Set aside.
To assemble the flan, pour cajeta into the bottom of flan molds or individual cups, add the bananas and the cheese mixture. In a water bath with hot water, cook over medium heat on the stove for approximately 30 minutes. Cool.
Unmold the flans and decorate with chopped walnuts and wafers.
