Bring the milk, except for one cup, to a boil with the lemon (orange) peel and the cinnamon stick.
Mix the cornstarch with the sugar, add the cold milk and dissolve everything well.
Once the milk has boiled for a while (the longer it boils, the more flavor of cinnamon and lemon it will have), remove the cinnamon and lemon peel and add this to the sugar-cornstarch-milk mixture and mix well.
Return to the saucepan and over medium heat, stirring constantly, let it thicken.
Pour into a container and let cool. Once the dough is cool, turn it out onto the countertop or cutting board, or leave it in the mold to cut.
Cut into squares or diamonds or desired shape. Dust with flour, dip in beaten egg, and fry in oil on both sides until golden.
Remove and let drain. If desired, once the pieces are drained and slightly cooled, coat them in sugar.
