Boil the milk, except one cup, with the lemon peel (orange) and the cinnamon stick.
Mix the cornmeal with the sugar, add the cold milk and dilute everything well.
Once the milk has boiled for a while (the more it boils, the more cinnamon and lemon flavor it will have) take out the cinnamon and the lemon peel and add this to the sugar-corn-milk mixture and mix well.
Return to the saucepan and over medium heat, stirring constantly, let it thicken.
Pour into a bowl and let cool. Once the dough is cold, dump it on the countertop or table or leave it in the mold to cut.
Cut into squares or rhombs or desired shape. Flour, pass through beaten egg and brown in oil on both sides.
Take out and let drain. If you want it once drained the pieces and something cold to coat in sugar.
