Guava Paste Cheesecake

  • 2 cups cinnamon cookies, ground
  • 1 cup butter, melted, for the base
  • 4 cups cream cheese
  • 1 cup icing sugar
  • 2 cups whipping cream
  • 1 teaspoon vanilla essence
  • 2 envelopes unflavored gelatin powder, hydrated and melted
  • 300 grams guava paste
  • 2 envelopes unflavored gelatin powder, hydrated and melted for the guava paste
  • 3 guavas, sliced, for decoration
  • 1/2 cups walnuts, for decoration

  • In a food processor, process the cookies for 3 minutes. Mix with the melted butter until you obtain a dough.
  • Pour the mixture into a removable mold and press until compact to form a base.
  • For the cheesecake, beat the cream cheese with the powdered sugar for 5 minutes until fluffy, add the vanilla extract and the whipping cream, and beat for another 7 minutes.
  • Add the gelatin, beat for 2 minutes until integrated.
  • Pour over the cookie base and refrigerate for 2 hours.
  • Place the guava paste in a water bath, cook for 10 minutes until dissolved, add the gelatin, and let cool.
  • Pour over the cheesecake and refrigerate for 1 more hour or until set.
  • Unmold and decorate with slices of guava and walnuts.
