Cocadas are a typical sweet of many Latin American countries, and Mexico is no exception; we find them at fairs, markets, and no one can resist the sweet taste of a cocada. You will be amazed at how easy it is to prepare them.
Separate the yolks from San Juan® eggs from the whites and set aside.
Mix the yolks with the sugar, cornstarch, and grated coconut.
On a tray lined with parchment paper, place a small ring and pour a little of the previous mixture, press with a spoon to compact, remove the mold and repeat the process until the mixture is finished.
Bake for 15 minutes, until golden brown.
Let cool and enjoy.
