Authentic Chongos Zamoranos

Born in the city of Zamora Hidalgo, Michoacán, these authentic chongos zamoranos are a classic dessert that features a rubbery and sponge-like texture packed with flavor thanks to the combination of whole milk, cinnamon, lime juice, and sugar.   • 1 cup whole milk
  • 3 cups sugar
  • 2 sticks cinnamon, for the chongos zamoranos, for garnish
  • 3 tablespoons piloncillo, shredded
  • 2 limes, juice

  • In a pot, heat milk. Add sugar, cinnamon sticks, and piloncillo. Heat slightly to release the aroma of the cinnamon, but do not bring to a boil.
  • Add lime juice to the previous mixture for the milk to curdle.
  • In a small pot, cook authentic chongos zamoranos until they turn brown. Do not stir for 2 hours.
  • Remove authentic chongos zamoranos from the pot and strain. Serve authentic chongos zamoranos with a bit of liquid and garnish with cinnamon sticks.
