To print
Delicious and traditional dessert of Zamorano chongos from Michoacán, a recipe from the viceregal era created in the convents of Zamora, this rich dessert based on curdled milk with a sweet touch of sugar, flavored with cinnamon. Prepare them with us, they are great.

Ingredients

9 portions
  • 1 cup milk, whole
  • 3 cups sugar
  • 2 rajas cinnamon, for chongos and to decorate
  • 3 tablespoons piloncillo, grated
  • 2 lemons, for juice

Preparation

Heat a pot with the milk, add the sugar, the cinnamon, the brown sugar, heat enough without reaching a boil and all the ingredients release their aroma.
Add the lemon juice, add to the mixture so that the milk curdles.
In a pot, cook the chongos until they turn amber color, do not move the chongos for 2 hours.
Remove the chongos from the pot, strain and serve with a little of the liquid, accompanied with a few sticks of cinnamon stick.

PRESENTATION

Serve the chongos in a container with a little cinnamon stick.

TIPS

Rennet is normally found in pharmacies, if you can't find it, it can be substituted for the juice of two lemons.
