First, make the dough by mixing the flour with sugar and incorporating the butter in small pieces and the lemon zest. Mix well with a pastry blender.
Once we have the homogeneous mixture with the small pieces of butter, add the egg and yolk, and mix well. Form 2 balls and let them rest for one hour in the refrigerator wrapped in plastic.
After this time, roll out the dough to .5 cm thick and place it in a tart pan. Roll out the other half and cut it into long strips 1 cm wide.
In a saucepan, mix the jam and lemon juice, heat slightly, and let cool.
Once cool, spread it over the dough in the pan and cover with the strips of dough to create a woven pattern.
Place in a preheated oven at 350º F and bake for about 25 minutes until lightly golden.
