Our favorite flavors in a fun mosaic gelatin of cajeta and vanilla are the perfect combination to share with family; it's also an extremely refreshing recipe; the softest and creamiest gelatin you will ever eat.
4 envelopes unflavored gelatin powder, for the vanilla gelatin, hydrated and melted
4 tablespoons vanilla essence, for the vanilla gelatin
2 cups cajeta, for the cajeta gelatin
1 cup cow's milk, for the cajeta gelatin
1 can evaporated milk, for the cajeta gelatin
4 envelopes unflavored gelatin powder, hydrated and melted
cajeta, for decorating
1/2 cups pecans, for decorating

For the vanilla gelatin, blend the evaporated milk, milk, condensed milk, vanilla extract, and gelatin.
Pour into a previously greased mold and refrigerate for about 1 hour or until set.
For the cajeta gelatin, blend the cajeta, milk, evaporated milk, and gelatin. Set aside.
Pour half of the mixture into a previously greased mold and refrigerate for 40 min.
Unmold the vanilla gelatin and cut it into squares. Place them on top of the set cajeta gelatin, and cover with the remaining cajeta mixture. Refrigerate for about 2 hours or until set.
Unmold and decorate with cajeta and walnuts.
