  • 5 eggs
  • 3/4 cups sugar
  • 4 tablespoons lime zest
  • 1 cup vegetable oil
  • 1/2 cups milk
  • 2 cups Tres Estrellas® flour for hot cakes
  • 1/2 tablespoons baking powder
  • 2 sticks cream cheese
  • 1 1/2 cups icing sugar
  • 3/4 cups whipping cream
  • lime wheel, for decoration
  • maraschino cherries, for decoration

  • Place the eggs and sugar in a bowl and beat for 3 minutes. Add the lemon zest, oil, and milk, while continuing to beat. Finally, gradually add the Tres Estrellas® pancake flour and baking powder. Mix until integrated.
  • Pour the mixture into mantecadas molds and fill them ¾ of their capacity. Bake at 180 °C for 30 minutes.
  • For the frosting: beat the cream cheese, lemon juice, and powdered sugar until combined. Add the whipping cream and beat until integrated.
  • Decorate the lemon pie mantecadas with frosting, lemon slices, and maraschino cherries.
