Chocomuffins

This recipe is the favorite of my whole family among all the muffin recipes I have made; it is the standard muffin recipe, just slightly modified with ingredients that enhance the flavor.

  • 115 grams butter, at room temperature
  • 150 grams dark chocolate, in small pieces
  • 180 grams dark chocolate, in large pieces
  • 325 grams flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoons salt
  • 1 teaspoon vanilla essence
  • 125 grams brown sugar
  • 2 eggs
  • 180 milliliters cow's milk
  • 1 teaspoon lime juice
  • 100 grams chocolate chips, with caramel flavor

  • Preheat the oven to 180ºC. Prepare the muffin or cupcake liners.
  • Mix the milk with the juice and let it rest for 5-10 minutes.
  • Melt our 150g of dark chocolate along with the butter using a double boiler. Remove from heat and let cool.
  • In another bowl, mix together all the dry ingredients: flour, salt, baking powder, baking soda. Set aside.
  • Using a spatula, beat the chocolate and butter mixture with the sugar. Then add the eggs, milk, vanilla, and finally, using a spatula, fold in the flour.
  • Add the large pieces and the caramel chips.
  • Divide the batter into the molds, filling them at least 3/4 of the way full. Bake for about 25 minutes.
