Blueberry and Cranberry Muffins

  • 1 egg
  • 75 grams vegetable oil
  • 190 grams sugar
  • 1 cup Gamesa® pancake mix
  • 160 grams cow's milk
  • 8 grams vanilla essence
  • 60 grams dried cranberries
  • 60 grams frozen blueberry
  • 8 grams baking powder

  • Whisk the egg, oil, sugar, milk, and vanilla.
  • Incorporate the Gamesa pancake flour and baking powder in 2 portions. Mix thoroughly until the mixture is homogeneous.
  • Add the blueberries and incorporate gently, being careful not to crush the blueberries.
  • Pour into previously greased molds and bake at 200 °C for 20 minutes.
  • Remove from the oven and let cool for 30 minutes.
