Oatmeal and Tangerine Bread

  • 2 cups whole-wheat flour
  • 1 cup oats
  • 1/2 cups cranberries, dry
  • 3 teaspoons baking powder
  • 1/4 cups sugar
  • 1/3 cups butter, or 2 heaping tablespoons
  • 1 cup mandarin orange juice, strained
  • 1 egg
  • 1 dash vanilla essence

  • Preheat the oven to 180°C
  • Mix all the ingredients in a bowl and pour it into a previously greased and floured mold.
  • Place the mixture in the oven and cook for approximately 20 minutes or until the center is cooked; we will know it's ready by inserting a toothpick; if it comes out clean, the bread is done.
  • Wait for it to cool and then unmold.
