Cream Cake

  • 1 1/2 cups clotted cream
  • 1 1/2 cups sugar
  • 6 egg yolks
  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • icing sugar, for decoration
  • strawberries, for decoration
  • blackberries, for decoration
  • raspberries, for decoration

  • Preheat the oven to 180°C.
  • Whip the cream with the sugar until it is creamy, then add the egg yolks one by one until combined.
  • Add the flour, baking powder, and beat for 5 more minutes at medium speed.
  • Pour into a previously greased and floured loaf pan and bake for 40 minutes or until a toothpick inserted comes out clean. Let cool and set aside.
  • Using a sieve, sprinkle powdered sugar, and decorate with strawberries, blackberries, and raspberries.
