Delicious healthy cake, made with whole wheat flour and tasty mamey that will make it moist and fluffy, ideal if you have a sweet craving and want to take advantage of the mamey season. When it comes out of the oven, the aroma will be irresistible.
1 mamey, 1 piece mamey, peeled and pitted, cut into cubes (only pulp)
2 tablespoons orange zest
1/4 cups macadamia nut, topping to cover

Preheat the oven to 180 °C
In a bowl, mix the whole wheat flour with the oat flour, flaxseed, baking powder, ground cinnamon, and sugar. Set aside the dry ingredients.
Beat the eggs with the milk, oil, and vanilla until well incorporated, and beat for 2 more minutes.
Gradually add the dry ingredients to the mixer, add the mamey and orange zest, and mix well to achieve a homogeneous mixture.
Pour the mixture into a small greased and floured mold. Add the macadamia nut topping. Tap the mold 3 times to release the air. Bake for 20 to 25 minutes.
Remove from the oven and let the cake rest for 5 minutes, sprinkle with powdered sugar, serve, and enjoy.
