Flaxseed, Mamey, and Citrus Cake

Delicious healthy cake, made with whole wheat flour and tasty mamey that will make it moist and fluffy, ideal if you have a sweet craving and want to take advantage of the mamey season. When it comes out of the oven, the aroma will be irresistible.

  • 1 2/3 cups whole-wheat flour
  • 3/4 cups oat flour
  • 5 tablespoons flaxseed
  • 2 teaspoons baking powder
  • 1 tablespoon cinnamon powder
  • 1/2 cups brown sugar
  • 1 egg
  • 1 cup low-fat milk
  • 1/4 cups sunflower oil
  • 1 teaspoon vanilla essence
  • 1 mamey, 1 piece mamey, peeled and pitted, cut into cubes (only pulp)
  • 2 tablespoons orange zest
  • 1/4 cups macadamia nut, topping to cover

  • Preheat the oven to 180 °C
  • In a bowl, mix the whole wheat flour with the oat flour, flaxseed, baking powder, ground cinnamon, and sugar. Set aside the dry ingredients.
  • Beat the eggs with the milk, oil, and vanilla until well incorporated, and beat for 2 more minutes.
  • Gradually add the dry ingredients to the mixer, add the mamey and orange zest, and mix well to achieve a homogeneous mixture.
  • Pour the mixture into a small greased and floured mold. Add the macadamia nut topping. Tap the mold 3 times to release the air. Bake for 20 to 25 minutes.
  • Remove from the oven and let the cake rest for 5 minutes, sprinkle with powdered sugar, serve, and enjoy.
