Strawberry Yogurt Cake

  • 225 grams Santa Clara® strawberry yogurt
  • 1 cup unsalted butter
  • 3 eggs
  • 3 tablespoons lime juice
  • 1 tablespoon lime zest
  • 2 1/2 cups flour
  • 1/2 teaspoons baking powder
  • 2 cups strawberries, washed and disinfected
  • 1 cup icing sugar

  • Preheat the oven to 180°C.
  • Grease and flour a round cake mold. Sift 2 ¼ cups of flour, baking powder, and salt. Add the lemon zest and set aside.
  • Cream the butter together with the sugar, add the eggs one by one and pour in 1 tbsp of lemon juice.
  • Incorporate, alternately, the flour mixture and Santa Clara® Strawberry Yogurt. With the remaining ¼ cup of flour, coat the strawberries. This is to prevent them from sinking to the bottom of the cake, ensuring they are well distributed.
  • Place the mixture in the greased mold. Lower the oven temperature to 165°C and bake for approximately 1 hour.
  • Remove the cake from the oven and let it cool completely before unmolding.
  • Combine the remaining 2 tbsp of lemon juice and powdered sugar to make a glaze. Decorate the cake with the glaze.
