Pulquechanas

Delicious cookies made with a typical Mexican drink: pulque.

  • 1/2 liters pulque, natural
  • 1 kilo wheat flour
  • 1/2 kilos vegetable shortening, at room temperature
  • 1 teaspoon salt
  • granulated sugar, enough to sprinkle

  • On a flat surface, table, or board for kneading, and with the help of a scraper or wedge, soften the lard.
  • Add the flour gradually, always working with a scraper until a sandy consistency is obtained.
  • Add the salt and the pulque, a little at a time, until the 1/2 liter is finished.
  • Knead just enough to obtain a homogeneous dough.
  • On a lightly floured table or board, roll out small portions to about 1/2 centimeter thick.
  • Cut with the edge of a small glass or with a round cookie cutter.
  • Coat each cookie with granulated sugar.
  • Place them on greased baking sheets with non-stick spray.
  • Bake for 10 to 15 minutes at 160°C.
  • Increase the oven temperature to 200°C.
  • Place in the broiler for 5 minutes to caramelize.
