Snow Cake with Yogurt, Vanilla, and Blueberries

  • 1 1/2 cups wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoons salt
  • 1 cup Oikos® plain Greek yogurt
  • 1/2 cups granulated sugar
  • 3 eggs
  • 2 tablespoons vanilla essence
  • 1/2 cups vegetable oil
  • 1 cup cranberries
  • 1 cup icing sugar, for the glaze
  • 2 tablespoons lime juice, for the glaze

  • Preheat the oven to 180°C.
  • In a bowl, mix the wheat flour, baking powder, and salt. Set aside.
  • In another bowl, mix the natural Oikos® yogurt, sugar, eggs, vanilla extract, and vegetable oil.
  • Combine the mixtures and add the blueberries, mixing until fully integrated.
  • Pour the mixture into a greased and floured cake mold, bake for 40 minutes. Let it cool.
  • For the glaze, mix the powdered sugar with lemon juice.
  • Pour the glaze over the cake and decorate with blueberries.
