These oatmeal cookies contain raisins and have a very soft texture. You can add some chocolate chips to give the recipe a twist. They are simply perfect for sharing at home or gifting to someone special; you can always enjoy them with a refreshing glass of milk.
Preheat the oven to 325°F. Place parchment paper on cookie sheets.
Melt the butter in the microwave and let it cool slightly.
Mix the flour, baking soda, and salt. Set aside.
In a mixer, beat the melted butter with brown and regular sugar. Add the cinnamon, vanilla, egg, egg yolk, and beat for a few more minutes until it has a smooth and creamy consistency.
Add the flour and stir until everything is mixed.
Add the oats and raisins. Stir.
Place 1/4 cup of the mixture into balls on the cookie sheets (spaced apart so they don’t stick) until all the dough is used.
Bake for 14-16 minutes.
