Soft Oatmeal Cookies

These oatmeal cookies contain raisins and have a very soft texture. You can add some chocolate chips to give the recipe a twist. They are simply perfect for sharing at home or gifting to someone special; you can always enjoy them with a refreshing glass of milk.

  • 2 cups flour
  • 1/2 teaspoons baking soda
  • 1/2 teaspoons salt
  • 3/4 cups unsalted butter, melted
  • 1 cup brown sugar
  • 1/2 cups sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon vanilla essence
  • 1 egg
  • 1 egg yolk
  • 1 1/2 cups oats, “old fashioned” style
  • 1 cup raisins

  • Preheat the oven to 325°F. Place parchment paper on cookie sheets.
  • Melt the butter in the microwave and let it cool slightly.
  • Mix the flour, baking soda, and salt. Set aside.
  • In a mixer, beat the melted butter with brown and regular sugar. Add the cinnamon, vanilla, egg, egg yolk, and beat for a few more minutes until it has a smooth and creamy consistency.
  • Add the flour and stir until everything is mixed.
  • Add the oats and raisins. Stir.
  • Place 1/4 cup of the mixture into balls on the cookie sheets (spaced apart so they don’t stick) until all the dough is used.
  • Bake for 14-16 minutes.
