Soft Oatmeal Cookies

  • 2 cups flour
  • 1/2 teaspoons baking soda
  • 1/2 teaspoons salt
  • 3/4 cups unsalted butter, melted
  • 1 cup brown sugar
  • 1/2 cups sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon vanilla essence
  • 1 egg
  • 1 egg yolk
  • 1 1/2 cups oats, old fashioned
  • 1 cup raisins

  • Preheat oven to 325 º F. Line baking sheet with parchment paper.
  • In the microwave, melt butter. Let cool slightly.
  • In a bowl, mix flour, baking soda, and salt. Set aside.
  • In a mixer, beat butter, sugar, and brown sugar. Add cinnamon, vanilla essence, egg, egg yolk, and mix until smooth and creamy.
  • Add flour and mix until perfectly incorporated.
  • Add oatmeal and raisins. Stir.
  • Ball ¼ cup of cookie dough and arrange it on a baking sheet. Repeat until all of the cookie dough is used up. Arrange cookies leaving free space in between to keep them from sticking.
  • Bake soft oatmeal cookies for 14 to 16 minutes.
