In a blender, place the prepared hot cake mix, eggs, milk, and oil. Blend at medium speed until you have a smooth mixture. Let it rest for 5 minutes and blend again for 5-10 seconds.
Melt some butter in a non-stick skillet over medium heat. When the butter starts to brown a little, lower the heat to medium-low and add 2 tablespoons of the prepared batter. Move the skillet by hand to cover the surface.
Cook for 30 seconds or until the top starts to look dry. Flip the crepe and cook for another 30 seconds. Repeat this step with all the crepe batter. Note: if the batter becomes too thick, blend again in the blender.
Prepare the apple filling. Melt 3 tablespoons of butter over medium heat and add the sliced apples. Cook the apples, stirring until they are soft, about 6 minutes. Add maple syrup, cinnamon, and a pinch of salt. Cook for another 2-3 minutes to thicken the sauce slightly.
Place some of the apple filling in the center of each crepe and fold. Fold the edges again, flip, and sprinkle with powdered sugar to serve.
