Crepes with Apples

This crepe recipe features an amazing apple filling with maple syrup and cinnamon. The secret to the crepe batter is that it uses Gamesa® Hot Cake Flour, giving it a special flavor. EAT WELL

  • 3/4 cups Gamesa® pancake mix, prepared according to package instructions
  • 3 eggs
  • 1 cup cow's milk
  • 2 tablespoons vegetable oil
  • 2 tablespoons butter
  • 3 tablespoons butter, for the apples
  • 6 cups green apple, thinly sliced
  • 1/4 cups maple syrup
  • 1/2 tablespoons cinnamon
  • icing sugar, for decoration

  • In a blender, place the prepared hot cake mix, eggs, milk, and oil. Blend at medium speed until you have a smooth mixture. Let it rest for 5 minutes and blend again for 5-10 seconds.
  • Melt some butter in a non-stick skillet over medium heat. When the butter starts to brown a little, lower the heat to medium-low and add 2 tablespoons of the prepared batter. Move the skillet by hand to cover the surface.
  • Cook for 30 seconds or until the top starts to look dry. Flip the crepe and cook for another 30 seconds. Repeat this step with all the crepe batter. Note: if the batter becomes too thick, blend again in the blender.
  • Prepare the apple filling. Melt 3 tablespoons of butter over medium heat and add the sliced apples. Cook the apples, stirring until they are soft, about 6 minutes. Add maple syrup, cinnamon, and a pinch of salt. Cook for another 2-3 minutes to thicken the sauce slightly.
  • Place some of the apple filling in the center of each crepe and fold. Fold the edges again, flip, and sprinkle with powdered sugar to serve.
