  • Separate the egg yolks from the whites. Put the yolks with the sugar in the mixer and beat until creamy and the sugar granules dissolve (it will be a pale yellow color).
  • Beat the egg whites with a pinch of salt (or cream of tartar) in the mixer until fluffy and stiff peaks form. Gently fold into the yolk mixture, not too quickly to avoid losing volume.
  • Sift the flour over the mixture gradually, mixing with folding movements until all the cup of flour has been added.
  • Place in a preheated oven at 160 degrees Celsius in a round mold.
  • While it bakes, prepare the frosting. Heat the cream in a pot, stirring constantly until it boils. Turn off the heat and add the white chocolate in pieces. Stir well to melt the white chocolate.
  • Once the cake is ready, remove from the oven and let it cool. (You can insert a toothpick to ensure it is cooked through).
  • Mix the condensed milk, evaporated milk, the rest of the cream, and the rum or liqueur.
  • Slice the cake into 2-3 layers (depending if you want 2 or 3 layers).
  • On the first layer of cake, pour some of the milk mixture on top, and then add some sliced peaches. Place the next layer of cake on top and cover again with the remaining milk. (If you have 3 layers, add more peaches and finish with the milk).
  • Once the cake is ready, it is covered with melted white chocolate until fully coated. It is decorated with sliced peaches and grated white chocolate.
