Separate the egg yolks from the whites. Put the yolks with the sugar in the mixer and beat until creamy and the sugar granules dissolve (it will be a pale yellow color). Beat the egg whites with a pinch of salt (or cream of tartar) in the mixer until fluffy and stiff peaks form. Gently fold into the yolk mixture, not too quickly to avoid losing volume.
