White Chocolate and Macadamia Cookies

This cookie recipe is spectacular. They contain chunks of white chocolate and macadamia nuts.

  • 2 1/2 cups flour
  • 1 tablespoon baking powder
  • 1/4 tablespoons salt
  • 1 cup butter
  • 1 1/3 cups sugar
  • 2/3 cups brown sugar
  • 2 eggs
  • 1 tablespoon vanilla essence
  • 1 cup white chocolate, in chunks
  • 1 cup macadamia nut, in chunks

  • Preheat the oven to 180 degrees Celsius and grease two baking sheets.
  • In a large mixing bowl, combine the flour, baking powder, and salt.
  • In another large mixing bowl, beat the butter, sugar, and brown sugar until the mixture is fluffy.
  • Add and continue beating the eggs and vanilla.
  • Now gradually incorporate the flour into the mixture, beating until a uniform dough is obtained.
  • Add the chocolate chunks and macadamia nuts and mix well.
  • Using a large spoon, place spaced circles of dough on the baking sheets.
  • Bake the cookies for 18 minutes or until they are lightly golden.
  • Remove from the oven and serve.
